I love entertaining this time of year. It is all about light, fresh bites, and cool, refreshing cocktails (and of course lemonade bars). This Pineapple Salsa is a win all season long. You can make it in a pinch for last minute guests, to serve with chips, or it can be topped over grilled fish for a tropical dinner. Of course if you just eat it with a spoon, I promise not to tell. The possibilities are endless with today’s salsa recipe!
PINEAPPLE SALSA
Ingredients:
2 cups diced fresh pineapple
1/2 cup chopped cilantro
1/4 cup finely chopped red onion
1/2 jalapeno pepper, stemmed, seeded and finely chopped
Juice and zest of 1 lime
Dash of kosher salt, to taste
Instructions:
Combine all of the ingredients and let flavors chill together for 30-60 minutes before serving.
Enjoy!

I’ve tried all sorts of salsa and I’m so happy I found this! I have yet to try salsa with pineapple, I can’t wait to make this for my next party!
