We’re staying super busy around here as we ship out lots of party decorations, but we still enjoy a little in-office party once in a while and our production & shipping team certainly deserves a little pat on the back. So these cupcakes right here are a pat on the back, for sure.
Chocolate Peanut-Butter Cupcake Recipes
Ingredients:
Cupcakes
1/2 cup unsweetened natural cocoa powder*
3/4 cup all-purpose flour
1/2 teaspoon baking soda
3/4 teaspoon baking powder
1/4 teaspoon salt
2 large eggs, at room temperature*
1/2 cup granulated sugar
1/2 cup light brown sugar
1/3 cup vegetable oil (melted coconut oil works too)
2 teaspoons vanilla extract
1/2 cup buttermilk*
Peanut Butter Frosting
1 cup unsalted butter, softened to room temperature
4-5 cups confectioners’ sugar
1/4 cup heavy cream*
2 teaspoons vanilla extract
2 tablespoons powdered sugar
Instructions:
Cupcakes
1. Line cupcake pan with cupcake liners
2. In a bowl whisk dry ingredients; flour, baking soda, baking powder and salt
3. Using a mixer combine eggs, sugar, oil and vanilla
4. Combine half of dry and wet ingredients, add buttermilk and add remaining mixture. Using a spatula gently combine ingredients.
5. Fill cupcake liners half way and bake for 19-20 minutes.
Frosting
1. Using a paddle attachment beat butter for 2 minutes.
2. Add sugar, cream, vanilla and powder peanut butter.
3. Mix until icing reaches your desired consistency.
4. Ice cooled cupcakes.
