With a new year ( often ) comes resolutions; and they are usually ones that we don’t end up keeping. Just telling it like it is! And since we’re trying to make up for all of the indulgent party food that we ate over the holidays let’s try something a tiny bit healthier for your next soiree!

Pepper + Dill Cucumber Rounds


2 cucumbers

1 red sweet bell pepper

1 bunch of chives

1 bunch of dill  ( 1/2 tablespoon chopped, sprigs reserved for garnishing )

Salt & Pepper

16 oz softened cream cheese


Step 1: In a mixing bowl combined 16 oz softened creamed cheese, 1 finely chopped bell pepper, 1/2 cup finely chopped chives, 1 tablespoon freshly chopped dill, and a pinch of salt and pepper. Combine thoroughly.

Step 2: Peel small portions of cucumber to leave a variegated look and the slice cucumbers into 1/2 inch thick rounds.

Step 3: Spoon 1/2 tablespoon cream cheese, chive and pepper mixture on each cucumber round. Chill until you’re ready to serve, and then top with sprigs of dill.
