Do you have a favorite fruit!?! Nice and I’m glad you asked; mango is a personal favorite of ours. Mostly because of it’s delicious ness, but also because it’s gorgeous hue! I mean that golden color is just divine. Keeping with our food theme of style and ease, we thought we’d touch on a dessert menu item.
When it comes to cocktail style parties, where people are generally up and moving around; we like to serve miniature or bite size items. It lets guests try lots of things and keeps your display festive and fun. Nothing is more drab that a half served tray of something!
Cheesecake Mouse with Mango Coulis
Ingredients:
For the mango coulis:
1 Cup Mango
1 Cup Water
1 Cup granulated sugar
For the cheesecake Mousse:
2 Cups chilled heavy whipping cream
8 oz softened cream cheese
1 cup powdered sugar
Instructions:
Step 1: combine mango, water and sugar in a saucepan and bring to a low simmer. Keep an eye on this; but it’ll need to simmer for about 15-20 minutes until water has cooked down and sauce has thickened. *allow mixture to cool completely
Step 2: In a mixing bowl, mix cream cheese and powdered sugar until thoroughly combined.
Step 3: In a separate, clean mixing bowl whip whipping cream until stiff peaks forms.
Step 4: Gently combine the whipped cream and cream cheese mixture until thoroughly combined.
Step 5: Spoon generous amounts of the cream cheese mixture into miniature glassware and top with mango coulis.
