Easy Appetizer
The holiday season comes quickly, often requiring quick and easy small plates for entertaining guests. This easy appetizer is the perfect solution to a mid fall soiree!
Endive is considered ‘in season’ between mid fall and early spring, making this vegetable the perfect solution for a mix and mingle environment. The shape of endive creates a ‘boat’ that may be filled to the brim with morsels that suit your dinning preferences. The possibilities are endless! The flavor of endive can be slightly bitter, making it the perfect pairing for sweetness. In this recipe I chose a local honey and creamy blue cheese to compliment the tartness of the endive.
For this recipe you’ll need:
3-4 endive
1 cup blue cheese
1/2 cup pecans
1/4 cup sweet honey – I used Savannah Bee Company ‘Cheese Honey’
Step 1 – Rinse endive and separate leaves
Step 2 – Allow leaves of endive to dry on a paper or dish towel
Step 3 – Place endive leaves on serving platter
Step 4 – Spoon blue cheese crumbles into endive leaves
Step 5 – Top with crushed pecans
Step 6 – Drizzle with honey and serve!
