Love is in the air! There is also a chill in the air for most of us, so why not stay warm and cozy with your Valentine this year and make a warm bowl of Tomato Basil Soup?
This soup is so easy, rich, and be-yond delish with fresh, sweet basil and a bit of heavy cream mixed in. It’s also light enough that you can serve it as a starter to a fancy schmancy, romantic dinner at home, should you choose to celebrate Valentine’s Day inside, this year!
TOMATO BASIL SOUP
Ingredients:
1 onion, chopped
3 cloves garlic, minced
1 6-ounce can tomato paste
1 28-ounce can crushed tomatoes
3 cups chicken broth
Kosher salt
Fresh cracked black pepper
1 1/2 cup heavy cream
1/4 cup fresh basil
Instructions:
In a stockpot, saute garlic and onion in olive oil for 1-2 minutes until fragrant. Add crushed tomatoes, tomato paste, chicken broth, salt and pepper. Allow to simmer on medium heat for 20 minutes.
Remove from heat, stir in cream and basil.
If you’re feeling extra festive, use a squeeze bottle and make a heart with your heavy cream!
